SMOKED SUMMER SAUSAGE 
5 lb. hamburger
5 tbsp. Morton Tender Quick salt
3 tbsp. garlic salt
4 tbsp. coarsely ground black pepper
1/2 tbsp. liquid smoke
4 tbsp. mustard seed

Mix together with hands; refrigerate. Knead once a day for 3 days.

FOURTH DAY: Form into 2-inch diameter rolls. Place on rack in smoker grill and bake at 180 degrees for 8 hours. Store in refrigerator. Great for afternoon snacks!
