MOM'S SQUASH CAKE 
1/2 c. shortening
1 c. brown sugar
1 c. white sugar
2 beaten eggs
1 c. mashed pumpkin or squash

3 c. sifted cake flour
4 tsp. baking powder
1/4 tsp. baking soda

Add alternately to the creamed mixture with 1/2 cup milk. Fold in 1 cup nut meats and 1 teaspoon maple extract. Bake in 3 layers at 350 degrees for 30 minutes. Cool. Frost with Harvest Moon Frosting (page 65).
