PUMPKIN OR SQUASH CAKE | |
1/2 c. shortening 1 c. sugar 1 c. brown sugar, firmly packed 2 eggs, beaten 1 c. cooked mashed pumpkin or squash (or canned) 3 c. sifted cake flour 4 tsp. baking powder 1/4 tsp. baking soda 1/2 c. milk 1 c. chopped walnuts 1 tsp. vanilla Cream shortening and slowly add sugar, eggs and pumpkin. Sift together flour, baking powder and soda; add alternately with milk to mixture. Fold in nuts and vanilla. Pour into 3 greased 8 inch layer cake pans. Bake at 350 degrees for 30 minutes. Cool and frost. |
