SQUASH CAKE 
1 pkg. yellow cake mix (2 layer)
1 pkg. instant vanilla pudding (4 serving)
4 eggs
1/4 c. oil
3 c. grated unpared yellow crookneck or zucchini
1/2 tsp. salt
2 c. chopped nuts

Combine all ingredients in mixer bowl. Blend and then beat at medium speed of an electric mixer for 4 minutes. Pour batter into 2 greased and floured loaf pans. Bake in preheated 350 degree oven for 50-55 minute, or until cake tester inserted in center comes out clean and cake begins to pull away from the edges.

Do not under bake. Let cool in pans for 15 minutes. Remove from pans and finish cooling on rack. Sprinkle with powdered sugar before serving, if needed.
