1 lg. potato, scrubbed and cut into 1/2 inch thick strips
3 egg whites
1/2 tbsp. Parmesan cheese
Pinch of pepper

Preheat oven to 400 degrees. Spray cookie sheet with Pam. Whisk together egg whites, Parmesan cheese and pepper. Dip potato strips to coat. Arrange on cookie sheet. Bake for 15 minutes. Turn and bake 15 more minutes or until golden brown. Serve with ketchup.
