LIMA BEAN CASSEROLE 
2 sm. boxes frozen lima beans
Approximately 1 c. grated processed cheese
1 can cream of mushroom soup
Chopped pimentos (optional)
Salt and pepper to taste

Cook limas until tender. Drain well. Add to the limas and mix well, the grated cheese, mushroom soup (undiluted), chopped pimentos, salt, and pepper. Pour into a buttered casserole dish. Top with buttered, crushed Ritz crackers. Bake at 350 degrees until top browns and casserole is bubbly.
