MARINATED ORIENTAL SALAD | |
1/2 lb. or 1 pkg. firm tofu 1/2 c. salad oil 3-4 tbsp. apple cider vinegar 2 tbsp. soy sauce 1 tbsp. fresh grated ginger root 12 oz. bean sprouts 1 c. bok choy, thinly sliced 1 c. napa, thinly sliced 1/2 c. mushrooms, thinly sliced Cut tofu into 1/4 inch cubes. Combine oil, vinegar, soy sauce and ginger root. Add dressing to tofu and other vegetables. Marinate at least 1/2 hour. Be creative, use other vegetables as well. |
