CAMPER'S BEEF STEW 
2 lbs. beef for stew, cut in 1 1/4 inch pieces
1 can (16 oz.) whole tomatoes, broken up
1 env. (0.7 oz.) Italian salad dressing mix
2 lg. carrots, cut 1/2 inch pieces
3 sm. onions, quartered
3 new potatoes, quartered

Combine beef pieces, tomatoes and salad dressing mix in Dutch oven. Cover tightly and simmer 1 hour. Add carrots and continue cooking 30 minutes. Add onions and potatoes and continue cooking covered 30 minutes or until beef and vegetables are tender. 6 servings.
