BAKED VEGETABLE ITALIANO 
1 lg. eggplant, peeled and diced
1 (9 oz.) pkg. French cut green beans
1 (16 oz.) can tomatoes, mashed
1 zucchini, sliced into rounds
1 clove garlic, minced
2 tsp. oregano

Combine vegetables in casserole dish. Stir in seasonings. Bake at 375 degrees for 30 to 40 minutes. Serves 6.
