MANDARIN ORANGE CAKE 
1 c. all-purpose flour
1 c. sugar
1 egg
1 tsp. baking soda
1 can mandarin oranges, drained
1/2 tsp. salt
1 tsp. vanilla
nuts (optional)

Combine ingredients and beat well. Bake at 350°F for 20 minutes in 8x8x2-inch pan. This cake falls in the middle.

Topping:

3/4 c. brown sugar
3 tbsp. butter
3 tbsp. milk

Boil topping ingredients and pour over baked cake.
