CHEESY POTATOES 
8 med. size potatoes, cooked and cubed
1/2 med. onion, chopped
1/2 green pepper, chopped
Pimento
2 to 3 tbsp. parsley, dried
1/4 lb. butter
1/4 lb. Velveeta cheese
1/2 c. milk

Melt together the butter, cheese and milk. Pour over potatoes and other ingredients; mix. Place in casserole or flat pan and bake at 350 degrees until it bubbles.
