BANANA MUFFINS 
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. sugar
1 egg, beaten
2 tbsp. vinegar
6 tbsp. milk
1/2 c. shortening, melted (I use oil)
1 c. ripe bananas, mashed

Combine in mixing bowl the dry ingredients; add remaining ingredients and stir lightly until dry ingredients are wet. (Muffins are not good overmixed.) Fill muffin tins 2/3 full; bake at 350 degrees for about 15 to 20 minutes. Makes 18 large muffins.

We enjoy these with our regular meal. You can cover with orange glaze and serve as a dessert or bake in miniature tins, cover with orange glaze and serve at a tea. Freeze nicely. Easy!
