BANANA BRAN MUFFINS 
3/4 c. plain flour
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
2 tbsp. sugar
1/3 c. milk
2 mashed bananas
1 egg
3 tbsp. melted shortening
1 1/2 bran flakes

Combine dry in bowl. Mix milk, bananas and egg; add to dry ingredients. Add shortening and mix well. Fold in bran flakes and if desired 1/2 cup nuts may also be added. Pour into greased muffin pans and bake at 425 degrees for 15-20 minutes.
