BANANA BRAN MUFFINS | |
1 lg. egg, beaten 1 c. 100% Bran cereal (not flakes) 1 c. ripe bananas, mashed 3/4 c. raisins 1/2 c. skim milk 2 tbsp. vegetable oil 1 c. flour 1/4 c. sugar 1 tbsp. baking powder 1/2 tsp. cinnamon 1/4 tsp. salt Preheat oven to 400 degrees. Lightly coat 12 cup muffin pan with spray. In bowl combine egg, cereal, bananas, raisins, milk and oil. Let stand 10 minutes. In medium bowl, combine flour, sugar, baking powder, cinnamon and salt. Stir into banana mixture just until combined. Spoon into prepared muffin tins. Bake 20 minutes or until toothpick inserted in center of muffin comes out clean. Serve warm or at room temperature. Makes 1 dozen. 100 calories per muffin, 3 grams fat, 0 grams saturated fat, 18 milligrams cholesterol, 229 milligrams sodium, 30 milligrams carbohydrates, 3 grams protein. |
