BANANA NUT MUFFINS 
2 c. all-purpose white flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening
1 c. sugar
2 eggs
1 1/3 c. mashed bananas (approximately 3 bananas)
1 c. chopped nuts (optional)

Combine flour, baking powder and salt. Cream shortening and sugar until light and fluffy. Beat in eggs, one at a time, blending well after each. By hand, stir in bananas. Add dry ingredients, stirring just enough to moisten. do not over beat! Fold in nuts. Pour into greased muffin tins or paper-lined tins until 3/4 full. Bake at 400 degrees for 20 minutes or until tested done and golden brown. Makes 12 to 18 muffins.
