APPLE NUT MUFFINS 
1 1/2 c. all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. sugar
1/2 tsp. cinnamon
2 egg whites
1/4 c. oil
1 tsp. vanilla
1/2 c. skim milk
2 c. coarsely chopped or grated apples
1/4 c. walnuts, chopped

Mix together first 5 ingredients. In separate bowl mix together rest of ingredients. Quickly stir wet and dry mixes together. Batter should be lumpy and coarse looking. Fill well greased muffin cups 2/3 full. Bake 15-20 minutes in 350 degrees oven. Makes 12 large muffins.

This is a low fat muffin that tastes very good and has only 122 calories per muffin. Leave out the nuts and the calorie count goes down!
