APPLE - NUT MUFFINS 
1 1/2 c. flour
2 egg whites
1/4 c. oil
1/2 c. sugar
1 tsp. vanilla
1/2 c. skim milk
2 c. chopped unpeeled apples
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease muffin cups. In a large bowl beat eggs, stir in oil, sugar and vanilla. Stir in half of the flour. Stir in milk and remaining flour. Fold in apples and nuts. Fill muffin cups 2/3 full. Bake 20 minutes. 16 muffins.
