BANANA NUT MUFFINS 
2 c. all purpose flour
1/2 c. sugar
1/2 tsp. cinnamon
Pinch of nutmeg
1 tbsp. baking powder
1 med. to lg. banana, diced
1/4 c. chopped walnuts (not too small)
2 eggs
1/2 c. milk
1/2 c. butter, melted

Mix flour, sugar, cinnamon, nutmeg and baking powder in a bowl. Add the banana pieces and toss to cover. Add the nuts and toss again. In a smaller bowl, beat eggs with fork; then beat in the milk and melted butter. Add to flour mixture stirring only until blended. Fill greased muffin tin 2/3 full. Bake in preheated 400 degree oven for about 25 minutes. Makes 1 dozen.
