JUMBO BANANA NUT MUFFINS | |
2 1/2 c. flour 3/4 c. sugar 1 tbsp. baking powder 3/4 tsp. salt 6 tbsp. butter 1 c. walnuts, chopped 3 ripe, med. bananas, cut up 2 eggs 1/3 c. milk 1/2 tsp. vanilla Preheat oven to 400 degrees. Grease 7 to 9 - 3 inch muffin pan cups. In large bowl, with fork, mix flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs; stir in walnuts; set aside. In covered blender container with blender at high speed, blend bananas, eggs, milk and vanilla only a few seconds, until bananas are chopped. Stir banana mixture into flour mixture, just until flour is moistened. Spoon batter into cups (batter will fill cups completely). Bake 25 to 30 minutes, until golden and toothpick inserted in center comes out clean. (Muffins rise very high.) Immediately remove muffins from pan. Serve warm. |
