BANANA NUT MUFFIN 
1/2 c. oil
1 c. sugar
2 eggs, beaten
3 overripe bananas, mashed
1/2 tsp. salt
3 tbsp. cocoa
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
6 tbsp. buttermilk
1 tsp. vanilla
1/2 c. chopped nuts

Beat together oil, sugar and eggs. Add mashed bananas. Beat well. Sift cocoa, salt, flour, soda and baking powder. Add to banana mixture with buttermilk and vanilla. Stir in nuts. Fill greased cupcake 3/4 full and bake at 350 degrees for 20 to 30 minutes. These are delicious served with fruit salad and chicken salad. 12 to 15 muffins.
