BANANA-PRALINE MUFFINS 
3 bananas (ripe)
1 egg
1/2 c. sugar
1/4 c. oil
1 1/4 c. flour
2 tsp. baking powder
1/4 tsp. salt

Pecan Mixture:

3 tbsp. brown sugar
1 tbsp. sour cream
1/2 c. pecan pieces

Mash the bananas; add the egg, sugar and oil and beat well. Add the dry ingredients to banana mixture and stir just until moistened. Spoon the batter into greased muffin tins and top each with a spoonful of the pecan mixture.

Bake at 400°F for 15 minutes or until golden. Serve warm.
