CRANBERRY - NUT MUFFINS | |
2 3/4 c. all-purpose flour 3/4 c. sugar 4 tsp. baking powder 1/2 tsp. salt 1 c. milk 1 egg, slightly beaten 1/4 c. shortening, melted 1 c. chopped cranberries 1/2 c. chopped walnuts 1 tbsp. grated orange peel Combine the flour, sugar, baking powder and salt. In a separate bowl mix together the milk, egg, and shortening; add to the flour mixture. Stir until just moist. Stir in the cranberries, nuts, and orange peel. Fill greased muffin cups 2/3 full. Preheat oven to 400 degrees. Bake 25 minutes. Remove muffins from pan; cool on a rack. Makes 12 muffins. Serve warm with whipped cream cheese. |
