SWEET POTATO APPLE BAKE 
1/3 c. firmly packed dark brown sugar
1/2 tsp. ground ginger
Dash of salt
2 lbs. peeled, cooked sweet potatoes
2 Golden Delicious apples, sliced
3 tbsp. melted butter, divided
1/2 c. shredded coconut
1/4 c. chopped pecans

Preheat oven to 375 degrees. Grease a 1 quart shallow baking dish. In small bowl, combine sugar, ginger, and salt; set aside. Cut sweet potatoes into 1/2 inch slices. Arrange half in baking dish. Cover with apples. Sprinkle half the brown sugar mixture over apples. Top with remaining sweet potato slices. Sprinkle with remaining brown sugar. Spoon on 2 tablespoons melted butter. Cover and bake 35 minutes. Remove from oven. Combine coconut, chopped pecans, and remaining butter; sprinkle over sweet potatoes. Return to oven and bake 10 minutes more or until coconut is lightly browned. Makes 6 to 8 servings.
