GREEN PEPPER JELLY 
3 lb. green peppers
6 c. granulated sugar
1 1/2 c. cider vinegar
1 bottle Certo
1 tsp. cayenne pepper
Green food coloring (optional)
1 lg. onion

Remove seeds from peppers. Process in blender or food processor until peppers are juice. (Peppers should yield 1 cup juice.) Strain through a sieve.

Combine strained juice, sugar and vinegar in large saucepan. Bring to a boil and add Certo and cayenne. Boil for 2 minutes more or until slightly thickened. Add a few drops of green food coloring, if desired. Pour hot mixture into hot sterilized jelly jars and seal.

Yield: 7 to 8 cups.

Preparation: 10 minutes.

Cooking: 10 minutes.
