GREEN PEPPER JELLY 
3 lg. green peppers (or 4 sm.)
1 1/2 c. cider vinegar
6 c. sugar
1 tbsp. cayenne pepper
1 bottle Certo
Green food coloring

Method: In blender, place cut up peppers and 1/2 cup vinegar. Blend 10-15 seconds. In large kettle, place remaining 1 cup vinegar and sugar. Add pepper mixture. Bring to boil and boil for 5 minutes. Add cayenne pepper and about 8 or 10 drops of food coloring. Cool for about 15 minutes, stirring occasionally. Add Certo and stir well. Put into jars. Makes about 6 small jars full. Top with paraffin or store in refrigerator.

Use: Excellent on hot dogs, hamburgers or top a cracker with cream cheese and add a little green pepper jelly and use as a snack.
