GREEN BELL PEPPER JELLY 
4 lg. green bell peppers
4 c. sugar
1 1/2 c. white distilled vinegar
6 oz. bottle fruit pectin
1 - 3 drops green food coloring

Wash and seed bell peppers. Cut into slices. Process in blender until liquid. Pepper juice should have some flakes of solid pepper. Combine pepper juice, sugar and vinegar in sauce pan; bring to a boil over high heat. Cook for 3 to 5 minutes. Add pectin and food coloring. Bring again to a boil; cook for 2 minutes. Remove from heat; let set for 1 to 2 minutes. Skim. Pour into sterilized jars and seal.
