BANANA CAKE 
1/2 cup vegetable shortening
1 1/2 cups sugar
1 teaspoon vanilla extract
2 well beaten eggs
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
4 tablespoons (or more) sour milk, yogurt or buttermilk
1 cup banana pulp
chopped walnuts or pecans (optional)

Cream shortening and sugar thoroughly. Add vanilla, eggs and beat until fluffy. Add flour, sifted with salt and baking soda, alternately with milk and banana pulp, beating well after each addition.

Bake in preheated 350°F oven for 50 minutes.
