SCALLOPED RHUBARB 
4 c. rhubarb
1 c. sugar
5 dinner rolls, day old
1/2 c. sugar
1 tsp. cinnamon
1/2 c. butter

Cook rhubarb with 1 cup sugar until mushy. Pour into greased casserole. Add dry bread, preferably homemade. Second choice would be deli bread or deli dinner rolls. Break up in 3/4 inch cubes and put over top of rhubarb. Sprinkle with 1/2 cup sugar and cinnamon. Drizzle with melted butter. Bake at 350 degrees for 30 minutes.

Frozen rhubarb can be used and can be purchased year round at most groceries.

Serves 6.
