MINESTRONE SOUP | |
1 lg. onion, chopped 2 stalks celery, chopped 1 clove garlic, minced 2 tbsp. olive or cooking oil 15 oz. can tomatoes, chopped 2 tbsp. parsley 1 1/2 tsp. basil 1/2 tsp. oregano Dash of pepper 1 bay leaf 3 c. vegetable or beef broth 2 c. vegetables (potatoes, green beans, broccoli, carrots) 1/2 c. broken cooked spaghetti In large Dutch oven cook first 3 ingredients in olive oil until tender. Add next 7 ingredients. Bring to boil. Reduce heat and cook for 30 minutes. Add vegetables and cook until tender. Add spaghetti - cook for 10 more minutes. Makes 6-8 servings. |
