ZUCCHINI BREAD 
3 eggs
1 c. cooking oil
2 c. sugar
2 c. grated zucchini squash
1 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
Nuts and coconut (if desired)

Beat 3 eggs. Add 1 cup cooking oil, 2 cups sugar, 2 cups grated zucchini squash, and 1 teaspoon vanilla. Sift together 3 cups flour, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon baking powder, and 1 teaspoon cinnamon. Stir into the liquid ingredients. Add nuts and coconut, if desired. Bake in 2 bread pans, greased and floured, at 350 degrees for 1 hour.
