MY MOTHER'S PINK CHOWDER | |
Med. size onion Piece of salt pork At least 6 lg. quahogs 6 med. size potatoes Can of plain tomato soup Condiments Peel and cut potatoes into cubes. Boil in just enough water to cover potatoes. Be sure they are not mushy. Set aside. Scrub quahogs. Steam until they open. Save every bit of juice. Drain it through cheesecloth to remove grit. Cut up and saute onion and salt pork cut together. Rinse pan with quahog juice then put mixture through blender so that salt pork does not float on top. Add mixture to potatoes. Cut the quahogs with scissors and add to mixture. Add tomato soup, salt, pepper, paprika and a bay leaf, if desired. Heat again. |
