ZUCCHINI CASSEROLE WITH CHEESE 
1 med. zucchini, thinly sliced
1 med. tomato, peeled and chopped or sliced
1 med. onion, sliced thinly
Salt and pepper
butter
1/2 c. bread crumbs
6 oz. cheese grated or sliced

In a greased 1-quart baking dish, layer zucchini, tomatoes, and onions until used up. Put a layer of cheese in the middle and on top. Sprinkle each zucchini layer with salt and pepper and dot with butter. Sprinkle crumbs on top. Bake uncovered at 350 degrees until vegetables are done. Serves 2.
