CARROT CAKE WITH CREAM CHEESE ICING | |
1 1/2 c. flour 1 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 1/2 c. nuts (optional) 1/2 c. raisins (optional) 2/3 c. oil 2 eggs 1 c. shredded carrots 1/2 c. crushed pineapple with liquid 1 tsp. vanilla Sift dry ingredients together. Add all other ingredients. Mix until moistened, then beat 2 minutes. Grease and flour 9 x 9 x 2 inch pan and bake at 350 degrees for 35 minutes. Cool and ice with cream cheese frosting: 1 tbsp. butter 1 tsp. vanilla 2 c. powdered sugar Cream together. |
