1/3 c. butter
1 1/2 c. instant mashed potato flakes
1/3 c. grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. pepper
2 eggs, beaten
6 chicken breast halves

Place butter in 9x13 inch pan and melt in 400 degree oven. Mix potatoes, cheese, salt and pepper. Dip chicken in beaten eggs, then roll in potato mixture. Place chicken, skin side up, in pan. Bake until thickest portion of breasts tests done, 40 to 45 minutes. Makes 4 to 6 servings.
