STUFFED MUSHROOMS 
med. to lg. mushrooms
cooked seafood (lobster, shrimp, crabmeat-one or all)
chopped scallions and celery
pepper
1 stick unsalted butter
lemon pepper or juice of 1/4 lemon
1 can cream of mushroom soup
parsley
1 bag bread crumbs
2 1/2 c. water

Bring water to boil. Saute scallions, celery and all seasonings in butter. Add to water. Add seafood, chopped in small pieces, to water and simmer for 5 minutes. Turn burner off and add bread crumbs. Mix well. Stuff mushrooms. You can freeze for stuffing for lobster, shrimp, etc., or as a side dish with fish.
