LEMON DELIGHT CAKE 
1 box lemon cake mix
2 eggs
1 can peach pie filling
1/2 c. sour cream

Combine cake mix, pie filling, eggs, and sour cream with a fork until mixed. Beat 1 minute ONLY with mixer. Pour in greased and floured jelly roll pan. Bake for 25-35 minutes at 350 degrees. Cool.

FROSTING:

1 (8 oz.) cream cheese, softened
1 (20 oz.) can crushed pineapple
1 box instant vanilla pudding (dry)
1 (9 oz.) Cool Whip

Whip together cream cheese, pudding and pineapple. Fold in Cool Whip. Frost.

May be refrigerated or frozen. May use orange cake mix instead of lemon or yellow cake mix with grated lemon or orange rind.
