MEATLESS VEGETABLE SOUP | |
1 lg. can crushed tomatoes 1 can Campbell's tomato soup 1 tbsp. sugar 1/2 lb. butter (I use 1 stick butter and 1 stick butter) 1 pkg. (40 oz.) frozen mixed vegetables 4 stalks celery, chopped 2 lg. onions, chopped 1 tbsp. salt Put everything in large kettle and fill to the top with water. Bring to boil and simmer for about 30 minutes, then add 1/2 cup rice and 1/2 cup washed barley. If you prefer noodles add these instead of rice and barley. Cook additional 15 minutes. Add parsley if you like. This also makes good Manhattan Clam Chowder if you add about 1 dozen clams to some of the soup. |
