PECAN PUDDING | |
1/2 c. flour 1/8 tsp. cream of tartar 3 eggs 1 c. dark corn syrup 1/2 c. sugar 2 tbsp. butter, melted 1 tsp. vanilla 1 c. chopped pecans Powdered sugar Light cream (optional) Combine flour and cream of tartar; set aside. In a mixing bowl, beat eggs with an electric mixer on high about 5 minutes. Add corn syrup, sugar, butter and vanilla. Beat well. Fold in flour mixture. Fold in half of the pecans. Transfer to a greased 10 x 6 x 2 inch baking dish. Sprinkle remaining pecans atop. Bake at 375 degrees for 30 to 35 minutes. To serve, spoon into dessert dishes. Sift powdered sugar over each serving. Serve with light cream, if desired. Makes 6 to 8 servings. |
