BRANDY PECAN PUDDING | |
4 lg. (or extra lg.) eggs 1 c. sugar 1 1/3 c. light corn syrup 1/3 c. melted butter 3-3 1/2 tbsp. brandy 1 1/2 tsp. vanilla 1 c. chopped pecans Ice cream Mix all of above ingredients together and beat well. Stir in pecans. Turn into a buttered 8-inch square pan. Bake at 375 degrees for 40 minutes. Serve warm topped with ice cream - vanilla or butter pecan. Yield 6-8 servings. |
