SUNSHINE SALAD 
2 sm. or 1 lg. pkg. lemon Jello
1 full c. crushed pineapple, drained
3 c. grated carrots

Dissolve Jello in 2 cups hot water. Add 2 cups cold water and pineapple juice (total 2 cups). Add pineapple and carrots. Put in dish 7 1/2" x 12" or a little smaller.
