APPLE CRUMB BARS 
3 c. flour
1 c. shortening
2 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
2 eggs
1 c. sugar
1/2 (10 oz.) jar apricot preserves
2 med. cooking apples, cored & thinly sliced
1/4 tsp. ground cinnamon or allspice
1/4 c. sugar

Grease 13"x9" pan. Into a large bowl, mix flour, shortening, baking powder, salt, vanilla, eggs and 1 cup sugar. With mixer on low, beat until well blended. (Dough will be crumbly.) With hand, knead dough until mixture holds together. Reserve 1/4 cup dough. Pat remaining dough evenly into prepared pan. Spread apricot preserves over dough. Arrange apple slices in rows, overlapping slightly to cover preserves.

Preheat oven to 375 degrees. In cup, mix cinnamon and 1/4 cup sugar. Sprinkle over apples. Pinch reserved dough into small pieces; sprinkle over apples.

Bake 30 to 35 minutes until crumbs are golden. Cool, cut into 36 bars.
