ZUCCHINI RELISH 
1 tbsp. cornstarch
4 c. ground onion
2 tsp. celery seed
10 c. ground zucchini
5 tbsp. salt
2 1/2 c. vinegar
1/2 tsp. nutmeg
4 c. sugar
1/2 tsp. pepper
1 tbsp. dry mustard
1 tsp. turmeric
1 red sweet pepper, chopped
1 green pepper, chopped

Combine onions, zucchini and salt. Let stand 6 to 8 hours. Drain and rinse in cold water. Drain again. Place in large kettle. Add remaining ingredients. Bring to a boil. Cook 30 minutes on medium heat. Place in hot jars. Makes about 5 pints.
