ZUCCHINI RELISH 
10 c. (about 5 lbs.) zucchini, ground
4 lg. onions, ground
4 lg. green bell peppers, ground
4 lg. red bell peppers, ground
2 1/2 c. cider vinegar
4 c. sugar
2 tbsp. cornstarch
1 tsp. turmeric
1 tsp. nutmeg
2 tsp. celery seed
1/4 tsp. pepper

Put the zucchini, onions and peppers through food grinder using medium blade, sprinkle with 1/2 cup salt. Let stand overnight. In the morning drain and rinse well with cold water.

Mix together the remaining ingredients. Bring to boil in a large kettle. Add the ground vegetables, then simmer for 3 minutes. Ladle into hot jars leaving 1/2 inch headspace. Makes 7 pints.
