CHEESE MEAT LOAF | |
1 egg 1 lb. ground beef 1 c. coarsely crushed saltine crackers 1/4 c. chopped green pepper (opt.) 1/4 c. finely chopped onion 1 1/4 tsp. salt 1/2 c. grated cheddar cheese 1 1/2 tsp. Worcestershire sauce (opt.) 1 tsp. sugar 1 c. tomato juice 1/8 tsp. pepper Break egg in bowl. Add all ingredients. Mix lightly and thoroughly. Turn meat into 6 1/2" x 11" x 1 1/2" pan. Pat into loaf about 9" long by 4" wide. Bake at 350 degrees for 45 to 50 minutes or until no red juice runs out when picked with a skewer in center. Let stand for 10 minutes and lift from pan to platter. Cold slices make delicious sandwiches. 4 to 5 servings. |
