LEMON POTATOES 
1 1/2 lbs. Idaho potatoes, baking
2 qts. boiling salted water
1 tsp. lemon rind, grated
1/4 c. butter, melted
3 tbsp. chives or scallions, chopped
1/4 tsp. nutmeg
1/4 c. lemon juice
Salt
Black pepper, freshly ground

Preheat oven to 450 degrees. Cut potatoes into 2 inch cubes and cover potatoes with boiling, salted water. Simmer for 4 minutes and drain. Toss the potatoes with lemon rind, butter, chives or scallions, nutmeg, salt and pepper. Place in a greased casserole and bake for 25 minutes or until potatoes are tender. Pour lemon juice over potatoes and serve. Serves: 4. (Prep and Cooking Time: 1 hour)
