LEMON STEAMED POTATOES 
16 sm. new potatoes (I have used sm. red potatoes)
1/2 c. butter
2 tsp. grated lemon rind
1 tbsp. lemon juice
1/8 tsp. salt
1/8 tsp. pepper
Lemon slices

Peel a 1/2 inch strip around center of each potato. Melt butter in a skillet; add lemon rind, lemon juice and potatoes, stirring gently. Cover and cook over low heat 35 to 40 minutes or until tender, stirring occasionally. Sprinkle with salt and pepper. Transfer to a serving bowl and garnish with lemon slices.
