LOW FAT RAISIN OATMEAL COOKIES 
1 c. canola oil
1 c. sugar
Scant 1 c. brown sugar, non-packed, very important
2 eggs
1 tsp. vanilla
3 c. whole wheat pastry flour
1 tsp. baking soda
1 c. old fashioned oatmeal
1 1/2 c. raisins

Cream thoroughly oil and sugars. Add eggs one at a time, mixing thoroughly. Add vanilla. Mix. Combine baking soda into flour. Add to creamed mixture in small portions, thoroughly mixing up after each addition. Mix in raisins and oats. Bake 10 minutes at 350 degrees. Fat: Negligible. Oil: 1 tsp. per cookie.

This definitely is not a low fat cookie recipe. If you wanted to make it low fat you'd be making over 40 cookies! I tried it out and I ended up making 30 VERY large cookies. I suggest you half the whole recipe so that you can get some 24 regular sized cookies. I also found it a bit dry the cookie dough so I added a bit of apple sauce. Everybody I gave them to LOVED them. It is a good recipe but to tweak it you can add some cinnamon, apple sauce and make it in a smaller batch!
