CHICKEN AND RICE 
1 c. skinned, cooked, cubed chicken
2 c. cooked brown rice
6 Sonoma dried tomatoes, diced
2 raw zucchini, unpeeled and cut into bite size pieces
2 c. frozen chopped spinach, defrosted and drained
1/2 tsp. tarragon
1/2 tsp. pepper
1/2 tsp. paprika
1 clove minced garlic
1/4 c. minced onion
1 c. white wine

Mix all ingredients, except the wine, together and pour into a baking dish. Pour wine over entire mixture. Cover and bake at 350 degrees for 40 minutes. Serves 4.
