Chicken chicanery and a magic touch make this a delightful dish that is low in calories. 1 to 2 frying chickens, quartered (removing skin is optional) 1/2 c. soy sauce 2 cloves garlic, minced 1 tsp. ginger 2 tbsp. oil 1/2 tsp. salt 1/4 tsp. pepper 1 tbsp. sherry Mix soy sauce, garlic, ginger, oil, salt, pepper and sherry. Pour over the chicken. If time allows, it can marinate all day in the refrigerator. Or it can be mixed and poured over the chicken just before baking in a preheated 350 degree oven for 1 hour and 30 minutes. It will be crispy and very brown. |
