CHICKEN CACCIATORE 
3 - 3 1/2 lb. boneless chicken
4 tbsp. olive oil
1 lg. onion, chopped
1 c. flour
2 tsp. salt
1/2 tsp. pepper
2 1/2 c. chopped tomatoes
1 clove garlic
1 c. chopped green pepper
1/2 c. white wine

In large skillet brown onions in 2 tablespoons oil. Remove from pan, saving oil. Coat chicken in flour, salt and pepper. Add remaining oil, saute chicken in oil until brown. Add tomatoes, green peppers, garlic and onions. Simmer, covered for 15 minutes. Add wine. Cover and simmer 20 minutes longer. Serve over noodles or spaghetti.
